If you are a busy Mom like myself you appreciate a quick family dinner that everyone will love. This recipe for quick and easy baked chicken bites is sure to please even the pickiest eater! This recipe has actually been with me since I was a wee 4th grader 🙂 Can you believe that?! I was part of a 4-H cooking class from the 4th grade through part of high school and my Mom was our cooking class leader. It was a group of girls from my class that would learn cooking techniques and create different recipes. And each year we would have several projects we could create and submit at the local county fair for a chance at a blue ribbon. I remember it fondly and I am very grateful that the program is still around and hope that my daughter one day might want to participate. Here is an actual picture of my cookbook that I submitted that year. I am so glad that I have kept it all these years even though I rarely use it anymore for actually recipes.

But one recipe I go to regularly was from this binder I put together and it is these easy chicken bites. I have adapted this recipe a lot from the original to fit my needs. I also no longer follow the directions and create it all by heart nowadays but this original will always be my inspiration.

Easy Baked Chicken Bites

A quick and easy family dinner that everyone will love

Ingredients

  • 3 Chicken Breasts, defrosted if frozen
  • 2 cups Italian bread crumbs
  • 1/2 cup Parmesan cheese, shredded
  • 1 cup butter

Instructions

  1. Cut the chicken breasts into bite sized pieces and set aside. If your chicken breasts are frozen, make sure to thaw them first.

  2. Combine the bread crumbs and shredded Parmesan cheese in a medium bowl

  3. In a separate bowl melt the butter

  4. Dip each chicken piece in butter and then into the bread crumb mixture. Place on a large baking sheet lined with aluminum foil. 

  5. Bake for 20-25 minutes until gold brown

This recipe is super adaptable and you can accomodate a crowd if needed. The original recipe called for a cracker crumb coating and adding basil and thyme. Sometimes if I don’t have herbed bread crumbs I will add Italian seasoning or whatever I might find in my spice cabinet.


Our favorite way to serve this recipe is with some type of alfredo pasta and a simple green salad. But really any type of sides would be great including mashed potatoes, potato wedges, green beans or corn!
