I wasn’t sure if I would call this a recipe when I first started writing this but then I realized when people asked what was in it I should write it down to share. And well that’s how a recipe is born. I created this hard boiled egg sandwich as an easy lunch for myself that was healthy and would fill me up and it tasted great too!

So let me share this simple easy recipe for you, whether you need a quick lunch on a busy day or a healthy lunch that you can pack for yourself. I have started making several hard boiled eggs at the beginning of the week to have in the fridge available whenever hunger strikes as they make a healthy snack/lunch option. This is also a great way to use up eggs from our very productive hens.
I will let you know that I eat this as an open-faced sandwich as that is just how I prefer it but it could definitely be made with two pieces of bread.
When I make this for lunch I enjoy it alongside some baby carrots with ranch and some fruit for “dessert”.

This recipe has six simple ingredients and of course you could add or subtract from these ingredients based on your personal preferences.

Once toasting the bread I spread it with butter and then after cutting the hard boiled egg with my egg cutter (a great little tool to have but not necessary).


After placing the egg slices on the sandwich I cut up half an avocado into slices and place these on top of the egg slices.

After the egg and avocado are on the toast your meal is almost done! The last thing I add is a drizzle of Chick-Fil-A original sauce and a sprinkling of Everything Bagel Seasoning.


Hard-Boiled Egg Sandwich
An easy, simple and healthy sandwich that makes a quick lunch during a busy day and tastes great!
Ingredients
- 1 slice of whole wheat bread
- 1/2 tsp spreadable butter (or butter of your choice)
- 1 hard boiled egg
- 1/2 avocado (smashed)
- 1/2 tsp Everything Bagel seasoning
- 1 tsp Chik-Fil-A Sauce (optional)
Instructions

Toast bread in toaster

Spread butter on bread after it is done to your liking in toaster

Slice a hard boiled egg and place on top of bread

Slice an avocado in half (saving half for another time) and scoop on top of egg on bread

Sprinkle Everything Bagel seasoning on top of avocado

Drizzle Chik-Fil-A sauce on top of sandwich and enjoy!

Optional: If using two pieces of bread follow steps 1 and 2 for the other slice
